XiFeng Jiu

XiFeng Jiu (西凤酒) is the originator and standard-bearer of the phoenix (凤, pronounced "feng") aroma category, and one of the two most revered spirits in Northern China, with a history dating back more than 4000 years before the Qin Dynasty. It is made with premium sorghum, wheat, barley, and peas, and uses natural underground water from the Shaanxi province.

XiFeng Jiu's distinctive flavor comes from special aging vessels called “the sea of liquor”, which hold as much as ten tons of raw distillate. These are created out of rattan, cotton, and hem paper; sealed with beeswax and grapeseed oil; and dried out prior to being used for aging.
